Cooked in cast iron of course Having double thick chops tonight.Many folks dont realize how much juicier and flavorful chops or chicken come out if they have been brined before cooking.Looks good. the wheels of the gods turn very slowly

Nessmuck OP trapper N Joined: Nov 2011 New Hampshire	Houndone....just 1/4 cup kosher salt into 4 cups of water ratio. Heat water up just until the salt is dissolved..then let it cool. Put meat in a glass / plastic bowl / dish....pour brine over meat .. Make sure it's covered with brine...cover and refrigerate for 4-6 hours No more..no less Rinse meat ..Pat dry...DO NOT add any more salt...but season as you wish It is better to die on your feet than to live on your knees.
