Not sure just what your looking for as far as recipe. I have only ever done salmon I just pack it tight in jars and pressure can it. Not sure how long I run it have that written down in with canner.
Its not hard thought.
As for any seasoning. I like to can some things plain at least doing big batches. That way I season different ways when use it..

a buddy picks the meat off the carcass after its smoked and cooled. then packs it tight in small jelly jars, adds one teaspoon vegetable oil on top of the fish, and pressure cans at about 10 pounds for 90 minutes. makes an awesome spread on crackers. hope this helps.

When I can catfish I add a half teaspoon of salt and use pint jars. 90 minutes in the canner. To fix usually just mash up saltine crackers real good. Use one egg for each jar. Put in crackers till its thick and make patties. Add some miracle whip and a slice of cheese its a real good sandwich.

I don't have a recipe but the best canned smoked fish I ever ate was canned some Sweet Baby Rays BBQ sauce. I didn't think it sounded too good but it was awesome.

On suckers unsmoked, I skin and cut them in chunks cross-grain and pack them tightly in jars and add NOTHING and pressure can at 10 # for about 2 and 1/2 hours. I cook them up just like canned salmon.

I have canned a lot of tuna. Just fill a sterile jar with tuna, clean the jar rim, screw on a new hot lid, and pressure can at 11lbs for 100 minutes.

I smoke them, then remove skin and rib bones, run the rest of the meat through the grinder [coarse grind], and pack in pint jars add 1/4 cup oil can for 15, ponds for 90 min,

Peel them off the hide and pull the ribs out. Fossil's recipe is spot on. The smaller bones will dissolve or get so soft you won't know they are there.
One of my favorite ways to eat canned smoke fish is to drain the oil off it and bust it up as fine as you can get it with a fork. Add a can of tuna, diced pickles and onions and then add Mayo. It is great on crackers and makes a decent sandwich too.
