Because some people cut them up and fry them instead? Also, I believe it has to do with age. A fryer is a younger bird (and more tender) than a roaster, which is an older and larger bird that benefits from the slower cooking time of roasting.

Fryers typically are a 2-4lb smaller younger bird. Baking "hen" 4lb and larger. Capon is a steer raised for roasting.

Friers are 7 to10 weeks age
2 1/2 to 4 1/2 pounds
Broiler is an interchangeable term in many places same size and age

a stew hen would be an older bird around 1 1/2 years

roasters are 3-5 months and 5-7 pounds

Cornish hens are 1 to 1 1/2 pounds and about 4 weeks old


America only has one issue, we have a Responsibility crisis and everything else stems from it.

seriously didn't know that...I thought they were a small breed of game bird from Ireland or something.

I thought they were a different type of bird too and not just month old chickens. Boy they sure are fat for a month old….

Can't beat the roasted Yard Bird from Sam's Club, whole bird spice rubbed and fire roasted for only $5. I'll stop and get one when I'm going fishing overnight. Yum Yum!
Cornish Rock game hens, are a cross between a Cornish and a Plymouth White, butchered at just at 2 lbs. Prized for tenderness and tendency to readily accept any spices added.

I like mashed potatoes and giblet gravy. Definitely green peas but not in a can. I like frozen peas better. Don’t mind jelled cranberry sauce at all.

Google would be wrong or failing to understand.

Cornish hens are the exact same "breed" or more correctly terminal cross known as a Cornish Rock chicken butchered at a month old, fryer at two months and baking hen at three.
