We had our first lambsquarter salad of the year. It's my favorite edible weed. I prefer it over spinach. A Quaker doctor friend of Diane's, Marge Nelson, used to call it "God's free spinach.

Not on a regular basis, but I have eaten it cooked like spinach.

In the spring or with no stress from drought and other factors, probably OK. Lambsquarter like many weeds can concentrate nitrtates to toxic levels.

Wife picked some weeds to eat today. Something over where the boys weed eating job is at before the hmguy sprayed it and some other plant that I saw and recognized as something she harvest but don't know what it's called that was in front of one of my bee hives I pointed out before I weed ate it down.

She just gave a class and is hosting another plant walk sometime later this year to teach about all the local things to forge. As you can see I'm not as into the plants and garden as she is but do recognize a lot of things just may not know their names or all the uses.

I was tempted to purchase some lambs up in Amish country yesterday. I think my youngest brother and I will butcher a couple of lambs soon.
