Smoking some beaver meat in a bit.
As to ribs, I started using the no wrap ribs method. Less messy, less foil wasted. Just sprriz em every 15-30 minutes.wont go back unless I get involved in competition cooking which I doubt

I did 3 racks just like Chuckles84 yesterday. We ate half a rack and vacuum sealed the rest for rainy days and family. I've considered the spritzing technique, but I've smelled some pretty nasty, soured smokers from doing it that way. If I had a pellet smoker, I might try it, but mine is electric and I'm not sure it gets hot enough to burn off the apple juice/cider vinegar?

Straight vinegar spritz might leave behind more if the vinegar taste but my 50/50 apple juice/vinegar hasnt given me issues. I smoke my no wraps at 250, well within range of welectric smokers
