I have a Chef's Choice that I love. It is my second one, (wore the first one out in about 4 years. No diamond dust left on the wheels, and no way to replace them). They are pricey, but work great. Yes, over quite a few years I’ve used two of the Chef’s Choice sharpeners, both were hand me-downs from our kitchen. We’ve since decided a particular “draw-through” type (non-electric) sharpener is a better sharpener than the Chef Choice’s so we now use it for our kitchen knives and also use one in the fur shed.

Accusharp brand knife sharpener is all you need. There is no reason to spend more money on skinning knives. A few passes and they are very sharp. I've been using them for years. I've tried other brands of the same style and none worked well, but AccuSharp Brand... click here works great.

Accusharp brand knife sharpener is all you need. There is no reason to spend more money on skinning knives. A few passes and they are very sharp. I've been using them for years. I've tried other brands of the same style and none worked well, but AccuSharp Brand... click here works great. IF you're using disposable knives, sure. If you're using a knife that isnt a junk drawer knife, dont let an accusharp and similar V-cut carbide sharpeners anywhere on your property or some fool will use it on your 30+ dollar knives

BS. I use it on every knife I own. It doesn't hurt a thing.

They feel are sharp but the edge doesnt last because its not uniform.So you must resharpen often. Steeling/stropping wont do much if anything. There is no burr development. I have to take those knives damaged by accusharp back to the stones or belt grinder to get the edge geometry back.

Do a paper test and see if they are sharp. If they don't get through paper cleanly and no curling of the paper, they are false sharp

I use a work sharp. Best knife sharpner i have ever used. Highly recommend one in the fur shed x2.Works great for me.

I like the small rotary wet stone sharpeners for restoring the wanted edge angle between every 3 or 4 hand stone or steel touch ups. Craftsman used to make one that you can still find preowned. I prefer a really flat edge that most sharpeners won’t give you.
I've learned enough thru the years to now know that I don't know enough. KNOWLEDGE IS FREEDOM.
