I caught this freshwater drum (sheepshead) today

And I was wondering if there was something I could sort of marinade the fillets in overnight? I'm planning on frying it tomorrow. Thanks!!

Ive never found a need to do so. Mild white meat, fry it up like any other.

But the go to for any suspect strong fish is buttermilk. A good soak, and trimming away all yellow fat and red streaks, in buttermilk will take out almost all muddy flavors.

20-30 minutes in whole milk , then rinse with cold water if you do anything at all.
this is good for all fish

That's what everyone calls them in the midwest. You're right technically, they are fresh water drums, but everyone around calls them sheephead. It's like people calling bluegills sunnies, or flatheads yellow cats. It's regional terms.

isn't it interesting that a fresh water drum gets a bad name and a salt water red drum gets all the attention as a very good fish and have strict limits and slot sizes

I have eaten them both

cooked I am not sure I could tell you the difference on a plate in the same batter

but Freshwater drum have no size or bag limit
