Guys keep nagging me to try and make one even though I never have so since we're just cruising tonight with nothing to do really decided to try.... Apparently it's about the same deal as a gumbo just a lighter butter roux...think mine was a little too light but first times first

And apparently this over a friend catfish fillet is the best thing ever so ..

Nothing wrong with that at all my friend. Maybe a little darker w the roux next time but it's all personal preference. It'll eat

Need a wooden spatula to stir that roux too. Idk it just seems to work better than a metal one smile

So you cook the veggies in the roux? first?

Never cooked gumbo or etoufee, but I make other stews and saute the veg first before adding the stock, etc, and make a roux separately and mix in last...
So educamate me on the roux first method.....

I cook my roux to about 80% the color I want then add my veggies , buy the time I'm at the color I want the veggies have been cooked down a lot so I don't have to cook them down as long . Just how I like to do things

Yeah was weird , had it about perfect for what I thought your supposed to get but when I added the seafood stock is whited out a good bit....don't think I ever had that happen .
O and yeah prefer a wooden one too but these yahoos broke the one I use on here laugh

I usually do for my gumbo since I cook a whole chicken anyway but never really have enough seafood or shellfish on the boat to make a seafood stock. If I could get the guys in the wheel house to pull over and left me buy something off these lil crabbing and shrimp boats we pass I could definitely do some lol

Don't you fish ? Shrimp shells and bream heads make a fine stock I
