He knows that we don’t know, I believe He’s okay with a question now and then.

Genesis 6: 6-7, God was sorry He had made man and decided to wipe out man from the face of the earth. But, God found favor in Noah which may have saved mankind. This maybe the condensed version of what God was thinking.

Wife: That's the 4th time you've gone back for dessert, doesn't that embarrass you? Me: No, I keep telling them it's for you.

…. If he’s all knowing he knows what we’ll choose… created some to do it

… maybe he just likes the smell off burning human flesh wafting up….i don’t know

… he created Adam and Eve aaaand the temptation knowing they were going to choose wrong….and then torture ensued

He didn't "create any to do it"
And he created a way out for us if we want it

…. Most of mankind was created to suffer both on earth and the afterlife then

God sees man's heart.

That is a game changer that man struggles with....because man can't hide it.

I kinda like Molinism as the answer. Basically, it's the idea that we live in the best of all possible worlds. As much as some things suck, any other version of creation would have been worse. So God's choice was to create this version, knowing from the start that it would cost him much agony. I actually find it comforting to know God still wants us, even knowing beforehand how often we are going to screw up.

Right now I’m having amnesia and déjà vu at the same time. I think I’ve forgotten this before.

As far as suffering doesn't a woman suffer in order to bring a life into this world? Doesn't a runner suffer while training to win a race? Most all of us choose suffering to some degree in order to enjoy the outcome.
