Not a staple around here like down south. But I got a hankering for it. Anyone make it from scratch or do younz use Jiffy mix or what? And what do you like with it?
You make a loaf or muffins?

Buy a box of Quaker Oats yellow corn meal and follow the recipe on the box. It’s easy and delicious.

Cornbread is life to us southerners. We grew corn to feed both stock and human.

1 1/2 cup PLAIN cornmeal
1 tsp salt
1/2 tsp baking soda

1 1/3 cup buttermilk
1 lg egg
2 heaping T bacon grease

Mix dry
Mix egg and buttermilk

Heat grease in your cornbread skillet, a well seasoned #5 cast iron, to almost smoking while preheating a hot oven, 425°.

Once to temp quickly and thoroughly mix wet and dry then pour in the hot grease and mix well. Pour into the skillet and back into the hot oven for 25 minutes or until the top is golden and just starting to brown.

If your skillet is properly seasoned the pone will flip right out onto a plate.

To this base recipe you can add 1/2 cup cracklings or diced onions or lightly fried chopped bacon

NEVER, EVER, UNDER ANY CIRCUMSTANCES IS SUGAR ALLOWED IN CORNBREAD

However, hushpuppies is not cornbread. Just saying.

BTW, I made both crackling bread and hushpuppies last night to go with the Red Beans and Rice.

Hushpuppies

1 1/2 cup plain cornmeal
1/2 cup flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1-2 T sugar or to taste
1 medium sweet onion fine diced
1 cup buttermilk
1 lg egg

Mix dry mix wet combine.

Drop by spoonful, about two teaspoon worth, into hot oil , 350°-375°. They'll puff up round and should flip themselves if all goes right. Fry until golden starting to brown.

Southern recipes none.
My other half (Sheila) insists it's not cornbread if you don't cook it in cast iron

I have cast iron pans just not loaf pans and I’m sure it’s fine to cook in round pans if you can tolerate triangles of corn bread. Knowing Chuckie he will prob just dig right in with a fork to make me crazy

No cooking with cajun cornbread?? Youtube him, not kid friendly. He sells his own brand not sure if it's any good.

Round is cornbread down here. Though grand dad used a square cast iron pan.

I've gotten into the habit of using my wedge pans, I got three BSRs a lodge a chinese and a BSR six wedge, to make cornbread. Nice individual servings.

BTW, be sure to save any leftover to make cornbread dressing.

Mama's play it by ear recipe.

Enough saved crumbled cornbread to fill whichever casserole pan your using. To the cornbread add sauteed celery and onion, until just soft, as you deem sufficient. Granny would add sliced boiled egg. Season well with sage, pepper, poultry seasoning. Moisten with pan drippings off the turkey or some chicken broth. Add enough beaten egg to firm it up when baked. Mix it all well.

Bake at 350° until firmed up and lightly browned.

Some add turkey or chicken to make it a casserole meal. One of my aunts on the coast would add oysters.
