So been caring. These lil dudes a decent bit today and said " you know...these look a lot like bluegill" so figured I'd try and cook some . And apparently from everything I'm seeing these are pinfish
And if course the usual, there trash fish there bait fish blah blah blah
Anyhow a bream hook on a Carolina rig with some shrimp tears these lil dudes up .

And decided just to do em like info bluegill. Scale gut and dehead

And been watching a lot of Chinese video where haut just score them and cook them in some oil so said why not. Lil earl , Tony's and

And forgot to take a finish picture but all in all .... About like a bluegill. Few more bones tho.

All in all of I could get bigger ones I'd do it again, not bad at all

I've only scored fish parallel to the ribs. Do you make the more perpendicular score more shallow?

It looks like having the perpendicular scores too might be a better way to let the hot oil and heat in then just the parallel score on thicker bodied fish. I'll have to try it.

I'm still thankful that you shared Tony Chachere's here. I'd never used it before that and use it a lot now.

I found strait Tony's to be a bit salty as the only seasoning on blue gills

I have also only don parallel scoring

I got some spices by looking at the Tony's bottle ingredient and made up a lower salt version that is great on gills

great low carb meal


America only has one issue, we have a Responsibility crisis and everything else stems from it.

I like Tony's best on grilled pork. I use Slap Your Momma on pork, which I also learned of on Trapperman, a lot too.

I usually grill and Diane usually fries. She uses Old Bay on fish a lot.

I sweat so much in hot weather, working on the farm, I really crave salt and salty foods. I salt the heck out of stuff. I sometimes just shake the salt shaker over my mouth.

I like salt and use it a lot , it was maybe how much I was putting on the fish , this is the Tony's Original , seemed a bit much for salt

I will check for the reduced salt when I go to the store next.

it's good stuff

salt and fat in the right amounts which are a lot more than most Dr's think are good for the right people.

they keep trying to treat every make and model of people like a one size fits all is the right thing and it doesn't work in anything else why would it work in the most diverse group.

We are in Destin for the week

Went snorkeling around the jetty and they were thick

I like bream and bet a pinfish would be good like you cooked them
