I decided to empty some freezer space yesterday, so I pulled 2 gallon bags of drums and thighs from last goose season and pressure braised them in the Insta-pot for half an hour with onions and spices. Pulled meat off bones, added crushed tomatoes and chipotle peppers and pressure cooked another half hour.
Rolled up in tortillas with some cheddar jack cheese and spooned some green enchilada sauce over top. It was goo-ood LOL.
