Welp one of my guys just caught the boat and tossed me a bag of about 30 some odd bone in dove breasts. Think I cooked do e like once so what's everyone's favorite way to do em ?

cut breasts off bone. Then swap out salt water for a couple exchanges. Then soak in Italian salad dressing overnight. Skewer on shish k bob alternating with chunks of pepper jack cheese and chunks of pepper and onion mushrooms heck basically what ya care for. Youll enjoy! Or If your feelin cajun. rinse in salt water and after a souple swapouts wash off with cold water. Make a gumbo or etouffee jambalaya. Them cajuns will eat anything they can make a gumbo out of!. Course Texans are basically same if we can chicken fry it !

Wrap with bacon and Grill
Toss the dove and eat the bacon.

Hmmm.... The guys have been complaining that I haven't made a gumbo in a while ! Think I might try that lol

If dove is done right,it tastes like sirloin steak.be a shame to make gumbo out of it

I did a stint in Arizona years ago, and they had very liberal bags and seasons. 20 birds in the morning, and 20 more after noon. In the southern part of the state, you could sit on a bucket and never not have doves wizzing by, all day long. It was incredible. We shot a LOT of doves, at one point finding over 300 breasts in the freezer, after eating doves for two weeks. I had to invent things to do with dove meat, and made casseroles, burritos, soups and stews, bacon-wrapped breasts, fried breast slices, etc. Even made a dish using tuna helper, substituting dove for the tuna. It was delicious!
Always soaked the meat in a salt bath for a couple hours followed by a cold-water rinse. It removes blood from the breast meat and tames the liverish flavor.


Just doing what I want now.

I take the breast halves off the bone first then it's hot cast iron and butter for about thirty seconds per side.

I will never understand why anybody would wrap them in bacon. Dove is delicious, one of the best tasting game birds there is. Why would you want to hide that wonderful flavor with bacon?

Having that many dove breasts, take them off bone, check for shot, dice or grind them up with chopped bits of bacon. Mix up well. Get some LARGE Jalapeno Peppers and stuff them with the mixture. Pan fry or roast them in oven until outer pepper skin chars! :-))))))))

Shish ka bobs x 2 here. My daughters still get (This word is unacceptable on Trapperman) if we don't shoot a few doves to cook some up this way every year.

Bake the breasts, pull the meat off. Mix the pieces of meat with rice and cream of mushroom soup. Done a lot of doves and rabbits that way.
