The old southern standby, Poppers. Half some jalapeno peppers fill with cream cheese, 1/2 deboned dove breast, wrap in bacon, grill. (Tip fry bacon about half done first so as not to overcook the dove). Have plenty of cold beer and a good shade close to the grill and eat as they come off!!

Dove madeira. Basically, grapes halved and dove breasts sauteed in a madeira reduction sauce and served over good Louisiana white rice (preferably E. Stansel white rice)
