A tomato of any kind...in a Clam Chowdah is Blasphemy...period. Agree! The NorEasters got that right!

In the Wintah time ...I seek out to find the best bowl of Clam Chowdah.
Everyone has their claim to fame..about their Chowdah.
But one bowl sticks in my head ...
Years back ...I was at the UNH ( University of NH ) ...Wildcats hockey game in Durham NH.
And in between periods ..I noticed a long line forming at some food stand.
I could smell it...and stood in line...twas the Best EVAH !!!
It is better to die on your feet than to live on your knees.

I used to go to this one deli alot because it was near my job. Great new england chowder on Fridays. Got it all the time. Sadly , they went out of business. As one of the last times they were still open , one of the guys who worked there and who knew me as a good customer asked if I wanted to know the recipe for their chowder. He showed me a food service #10 can. They didn't do anything other heating it up and serving it to you. Just your standard food service/restaurant pack. Much more clams/fancier ingredients than standard consumer grade , but sold at at the same price point to restaurants per serving compared to consumer grade due to volume.

I worked for a Fortune 500 company on a campus around 10K employees. The company staffed and managed it's own cafeteria and had excellent foods from the main course to desserts. One of my favorites was their New England Clam Chowder. Employees could place orders to carry home. I carried a many a gallon of Clam Chowder home over the years before they sub contracted out the cafeteria service and screwed everything up.

Food service/restaurant packs are made very differently than consumer grade. The idea is you will be willing to spend a goodly amount at a restaurant for a single serving of exceptional quality and the restaurant can make a decent profit. The downside to this is large quantities which may not work that well when everything comes in a #10 can and they want a minimum sale of a case of 6 cans.
