Wonderful Wife and I have been talking about making our own. Never done it before but watched a video where they use the Hires concentrate and used dry ice for carbonation.

Is the dry ice carbonation necessary? The reason I ask is that after her cancer surgery and tongue rebuild she has a hard time with carbonated drinks. The only beer she can drink is a tap dark beer from a local brewery when it is a little "flat". If we could make our own root beer so it is non-carbonated it would be great for her.

Any help with our root beer project would be appreciated!

You can make root beer without carbonation. It will taste a little overly sweet and feel flat in your mouth. The carbon dioxide in carbonated water makes carbonic acid, which is slightly sour. I find pure syrup, without carbonation ok and prefer a higher level than normal of syrup to carbonated water. I have the super taster gene and prefer sweet. Some people don't like that much sweetness. You should be able to add something else to mellow out the sweetness. Citric acid might work.

I don't like overly carbonated pop.

My mom made home made root beer, and it wasn’t carbonated. It was good. I think it came in a bottle and all she did was add water. I don’t remember fully, it was about 45 years ago.

I have, but not uncarbonated. No reason why you couldn't though. I use this product. You would just follow the process on the bottle, omitting the yeast. Also no need to leave in a warm place as said in the directions, they could go straight in the fridge. However, you may need to experiment with the amount of sugar to use. Without the yeast eating any of the sugar, it may be too sweet for you if you follow the directions as written.

We make homemade soda using what's called ginger bug for the fizz. Pretty simple to make, to start take a tablespoon of diced ginger root and two teaspoons of white sugar and two cups water. Don't use city water. Cover with a coffee filter. Then every day or two add two teaspoons of diced ginger and two teaspoons sugar. Then take whatever you want for flavor, we've had pine needle,apple, orange and pineapple, Boil in some water and simmer for a half hour or so. Make a simple syrup of one and a half cup white sugar and enough water to cover it, boil to melt the sugar. Let everything cool and add the sugar water and juice( strain out the chunks) in a gallon glass jug Add at least one cup ginger bug. Cover, let it sit a few days so it gets less sweet, the bottle it. It will get fizzy and then put the bottles in the fridge to stop the fizz. Works good and it makes a good juice too if you don't want it fizzy. Amazon sells saspirala root and such for making root beer, going to do that soon
