That’s a cool collection of vintage knives ADC and a great way to display them.

I also think it’s cool that your dad and granddad did custom butchering and made house/farm calls to do it.

Do you have any old Chicago Cutlery knives in your collection?

My dad had a couple of vintage Chicago Cutlery knives he used for processing deer. I used them a few times and liked them and decided to build a collection. It took me about two years of searching on various sites until I put together the collection I wanted. This is them all cleaned up and polished.

Then I had to build a knife block to house them all.

These are my go to knives at home now. The wife doesn’t like using them because I won’t let her put them in the dishwasher because of their wooden handles. LOL

Eh...wot?

Good stuff Lugnut. I am sure there are some of them in my collection as well. I never polished them up like yours.

I only did because they were going to be in my kitchen and daily users. The wife wouldn’t have allowed it otherwise.

Eh...wot?

Two of my mom's favorite kitchen knives are old carbon steel Herter's knives. My sister and I will fight over those when the time comes......

America only has one issue, we have a Responsibility crisis and everything else stems from it.

I have about a dozen butcher knives, pretty much what ya got there. Any of those a "sticker"?

Yes sir there is one and there's another one that dad used for that but it's not named that. I remember him sharpening it with a file to put a sort of serrated edge on it, not like the serrations you see today but a sort of rough edge that was still very sharp. It was only sharp on one side so he'd stick them then turn it over and cut the other way, very quickly. Was my job, when he did a couple for us later on, was to hold the front legs back quickly right after the shot so he could stick them. I'll get some more clear pictures later today.

My sticker is sharp on both sides but I've used a one sided before.

I took the cover off to add the new knife so I got some better pictures. The "sticker" dad used is the second knife from the top in the first picture. The real sticker is vertical on the left side of the same picture...

Good stuff there hippie. Do you have a skinner like the three vertical ones in my last picture? They were dad's favorite style.

It's called a cotton sampler knife, if it's the one I think you're talking about.

Its in the second pic down, right below the saw.

Never heard that name either, learn something new everyday!
