Marinade smells so good I could get a ladle and drink some. I’ve always marinated 24 hours but is there any benefit to going longer for a better flavor? And is that safe to do so? It’s been thawed already for a day in a vacuum sealed package. Any advice on that would be appreciated. I can’t wait! I’d make jerky outta the whole deer if I could

If you have one of the little vacuum sealers for jars? You can put the mix in half gallon jar and vacuum it down. That speeds the whole deal up and over night is more than plenty.
If you have it soak over night as is should be good. That is all I ever did before I had the vaccum sealer.

I usually go 24 hours but have gone longer and didn’t notice a difference in flavor.

I can tell you that you don’t want to get greedy and try to reuse the marinade for the next batch. It just doesn’t work, imparts almost no flavor to the second batch. That’s a mistake I won’t make again. LOL

Your meat will only absorb so much marinade then it is done. It won't take much more once the initial draw is taken in.

I can about smell your picture. Be sure to give at least part of it a heavy coat of course ground black pepper when you get it all laid out. I like some cayenne pepper on mine too but it's easy to over do, use a light touch.

If you put the jerky and marinade in a vacuum sealable bag and remove the air with a vacuum sealer, you will get much better marinade penetration of the meat. Vacuum sealing with a marinade is a trick most good restaurants use on all marinated meat dishes. It works great for jerky making too.

I don’t measure very well and tend to add more than what is recommended. And last year the guys recommended adding liquid smoke which I did

I had both hind quarters sliced into jerky strips.

This^^

The time given in recipes for brine is usually the time it takes for max absorption. Longer doesn’t add to or take away from flavor.

I have left it too long before and it was way too salty. Just the way I like it. smile
You will need extra beer to warsh it down though.
One time a buddy of mine I had a big bowl of freshly shelled pecans, lots of deer jerky and some beer.
You eat the pecans until you get mealy mouthed, then you eat jerky until your TMJ gives out. TMJ is the abbreviation of temporal mandibular joint, and ironically, Too Much Jerky.
Then you drink a beer.
Warsh, Rinse, and repeat. Just make sure that you don't run out of beer first.
We ended up being fat, drunk and happy after that particular binge.

Carl I myself had suffered TMJ because I was grinding my teeth at night and eating too many Haribo gummy bears. Not fun! I drink enough beer now so I sleep soundly through the night

if you have empty trays in your dehydrator I always fill them up with liver i ran through the slicer when slicing g the jerkey meat. I have a 9 tray unit and prefer it full if im running it.

The dehydrated liver makes great dog treats and makes use of the liver if we dont eat it ourselves.

I put mine in the dehydrator today. I hope this batch lasts longer that the first batch I did last week. My grandson gobbled up a one gallon ziplock bag of it in three days. That one was venison and this one is beef made from top round.

Thats a fine looking machine you got there boss. I'm currently using my holding box I bought cheap at auction. Makes the wife happy I dont tie her oven up. I can turn this on kinda walk away. Been using it to finish my sausages and othe smoked things too.

My kids got this for me for Christmas a couple years ago. 12 or 13 trays. I can do a bunch of jerky at once. The batches still don’t last long once the realize I have ran one off.

Lots of trays and it makes great jerky, not as fancy or expensive as others but it works for me.

I do rotate the shelves throughout the process.

I've got the same dehydrator, works really good for jerky and drying out mushrooms. That Texan must hang his jerky over the tumbleweeds in the desert.

Alton Brown's recipes never disappoint.... but I'm not as fancy as him so his calls for 8 whole cloves, 8 whole allspice berries, 12 whole juniper berries, 2 bay leaves, crumbled... I add "some" pickling spice for example. lol

I read, "Jerry's in the drink", but I thought that it would be about him falling off the wagon.
Whether he fell in or got snockered, I sure hope he's doing better by now.
Maybe y'all should send him some jerky to pick up his spirits.
