This^^

The time given in recipes for brine is usually the time it takes for max absorption. Longer doesn’t add to or take away from flavor.

I have left it too long before and it was way too salty. Just the way I like it. smile
You will need extra beer to warsh it down though.
One time a buddy of mine I had a big bowl of freshly shelled pecans, lots of deer jerky and some beer.
You eat the pecans until you get mealy mouthed, then you eat jerky until your TMJ gives out. TMJ is the abbreviation of temporal mandibular joint, and ironically, Too Much Jerky.
Then you drink a beer.
Warsh, Rinse, and repeat. Just make sure that you don't run out of beer first.
We ended up being fat, drunk and happy after that particular binge.

Carl I myself had suffered TMJ because I was grinding my teeth at night and eating too many Haribo gummy bears. Not fun! I drink enough beer now so I sleep soundly through the night

if you have empty trays in your dehydrator I always fill them up with liver i ran through the slicer when slicing g the jerkey meat. I have a 9 tray unit and prefer it full if im running it.

The dehydrated liver makes great dog treats and makes use of the liver if we dont eat it ourselves.

I put mine in the dehydrator today. I hope this batch lasts longer that the first batch I did last week. My grandson gobbled up a one gallon ziplock bag of it in three days. That one was venison and this one is beef made from top round.

Thats a fine looking machine you got there boss. I'm currently using my holding box I bought cheap at auction. Makes the wife happy I dont tie her oven up. I can turn this on kinda walk away. Been using it to finish my sausages and othe smoked things too.

The dehydrator may be in the cards for me. I have the Lem oven rack and it does a pretty good job
