I've been using a Caribou knife for the past 10 years or so with no complaints. I recently bought one of Lee Steinmeyer's fleshing knives which also seems to be a great knife although I've not had much chance to break it in yet.


Proudly banned from the NTA.

The Weibe red handled knife. I have a Necker, and one of Lee's too, but the Weibe is my favorite.

Lee Steinmeyer has three fleshing knives on offer: the standard, the parallel, and the mini parallel. I own the parallel (which I love), but not the standard.

What would you say are the best uses of the parallel vs. the standard? If I already have the parallel, are there situations when the standard would be the more useful size? Should I spring for the standard, too?

I have made a few transitions over the years. I use to use a floor mounted / attached beam for many years. A tapered beam. Made a portable beam many years ago for when I traveled on the road for months. I put up as much fur as I could and had to freeze the rest until I had some time to catch up. I used a necker for many years at that time.

Now I use a more horizontal bench mounted beam with a caribou knife. This working position is more comfortable for me at my current age and a better very slight work angle with a shorter beam.

Homemade beam. 8 inches at the bottom. To a tapered tip at top. Ausable superior flesher, caribou, Lee's, post,cheapo flesher I razor sharpened one side of. I don't like my necker and won't use it anymore. I also have a red handled weibe new in the box.

Caribou fleshing knife and homemade plastic beam. And for beaver a caribou 5 inch skinning knife (581 sr) and flesh on my knee.

My beam is from top lot stretchers, and I use the red handled weibe fleshing knife. Both have served well.

For what critters? I've used a fair number of fleshing knives. I prefer the Caribou for tough gristled coon and beaver. I like the Necker for pushing avg/smaller coon, yotes and cats. I started with a Sheffield knife in the early 80's. Great knife, but hard on the hands for me. I never did get one of Steinmeyer's knives, but there are plenty of reputable fur finishers out there that swear by them.

Being especially "frugal"....made a floor mounted beam from a 2x6, rounded it to match the cheap stock knife and sharpened the back side for shaving gristle....worked very well. Never used a "good" knife so can't say about those....this was just for coons though, YMMV,

I made my own beam. It Is attached to the wall with a large hinge. And it sits on a sawhorse.
I love my Necker. I know how to sharpens it and with a squared edge on the dull side I'm good to go.
