That looks like a great fall meal.
How do you prepare your squirrel if you dont mind sharing? Simmer until tender? Crackpot?
Looks like you have the right consistency with the meat - able to debone but not falling apart.

Had a nice smoked pheasant breast with crackers and cheese today for lunch. An old friend dropped off two smoked breasts a few days. Finally got a chance to eat one. Very good eating. This fella obviously has it down to an art in preparing smoked meats.

"Crackpot" LOL

I used a pressure cooker (InstaPot). It was seven squirrels and I put them in with some chicken stock, sea salt, black pepper, rosemary, sage and parsley. I pressure cooked them for thirty minutes at 10psi. I think 25 minutes would have been perfect. Very easy to remove from the bones but, like you said, not too soft.

Very helpful. I might steal that recipe! Probably would do real well with some fox squirrel to make fork tender.

Steal away stoney. I'd love to use it on fox squirrel. Many years ago there was a decent population of them when I lived on the other side of the county but it's been forever since I've seen one around here.

I have a friend who has one of those Big Green Egg smokers. He smoked some walleye and striped bass for me. They were okay but I wasn't nuts about them.

I've never heard of smoked pheasant but you have me curious. It does sound good. I'm guessing you eat it cold like other smoked meats?

I'll have to take your word for it Smash. I rarely eat rice, too many carbs. My daughter who is into "eating clean" bought a bag for me the first time I made this dish.

I saw where Mad Mike was talking about putting them over noodles or biscuits over in the how-long-to-Install-a-squirrel-into-a-pot thread. I might try that next time.

We use an insane amount of pepper in my house but never touch salt

I really do.

I just got a new grinder because the place I was getting my Malabar pepper doesn't make the fine grind anymore.

So I bought a grinder for the first time. Now I can get Malabar and Tellicherry peppercorns and grind them myself.

Lugnut I thought that smoked pheasant was extremely good and just about as good as something can be. It was also very moist which I was surprised. I thought it may be very dry. Flavor was excellent. Just wish I had more. Have to watch for the BB.s I found 2 while chewing.

I have had smoked pheasant several times. Always delicious and yes, very moist. Not sure how it is prepared, maybe brined before smoking?

We brine pheasant breasts before we grill them. Keeps them very moist.
