Is that crust hard and thick so that it cuts your mouth up when you get after it too fast?

Nope ..iam getting better at getting the crust thinnah.

With more hydration..you get a thinner crust.

Used 75% percent hydration....and that seems to be the happy spot.

I've moved on from the cast iron dutch for baking..

Now using the tins....one to hold the dough and the other tin for the cover.

No pre heating the cast iron anymore..

And get a bread loaf kinda shape now

More consistent slices now.

Bought 4 of these...can make 2 loafs at a time.

Like I said ...you use a tin for a lid...for the first 20 minutes of baking

Then remove the lid Aftah 20 minutes...then bake for another 10

Then Aftah that ..I remove the bread from the tin...and bake until I get the desired color.

Usually another 10-12 minutes

When shes selling them, my wife bakes them in rounds, but for us we prefer the loaf pans. They just aren't quite as pretty.
