Andouille sausage...smoked ham..soaked ovah night kidney beans

Cooking the Trinity ( onion..celery ..green pepper) now..

Plus a smoked ham hock

3 hour simmah !!

And of course ...cast iron Cornbread.

Wife and I just finished cooking 20lbs of collards for a Thanksgiving meal for about 25 family members. Seasoned with salt pork, of course.
