Okay don't know how to post video so just did couple pictures.
First i got my meat mixed up in marinade. I often do this right in the jar but this time used bowl then got jar.

Once that mixed well get it in jar and lid in place. Got to wipe the jar rim same as if canning something. If you look at where I made the X on lid you see the seal indicator bump is up.

Put the vacuum pump down firmly on the top. Mash the start button and it will run until has enough vacuum to shut off. This machine has led numbers showing the amount of vacuum.

I personally for this application don't care what the number is the jar is sealed with vacuum. If you watch while the machine is running. You can actually see bubbles coming out of the meat. Which mean the marinade is being drawn in. The X spot shows the bump down and jar sealed.

What I like about this is your meat or what ever is going to be as saturated as it can be. I plan to leave these jars im doing today in refrigerator over night. Tomorrow I will put the meat in oven to dry down and have my jerky. If I don't get to it tomorrow no big deal. Its in sealed jar in fridge.
This is how I use my vacuum jar sealer for marinating things. I have also used it when pickling fish or eggs the kind of things you usually just put in fridge and soak. I haven't tried it yet doing Sauer Kraut but have used it for my dill pickles. Where I was water bathing them just to get a seal. So far so good did those months ago and no popped seals.
The first unit I had a year ago and killed. I was doing batch picked eggs. Didn't leave enough head space. Sucked vinegar mix into unit and it died. Being I do my own thing like to know how things work. I took it apart dried it out and it actually worked for a while longer before it died again. The unit are cheap enough wife just bought me new one. The one that died is still on shelf about work bench. One these cold winter days. I may take it apart again and see if it lives or goes in scrap bucket.
Forgot to add these are 2 quart or half gallon Mason jars. Instead of occasionally stirring the meat. I just pick the jar up and shake it. That works best if you don't have the jar to full. Why I try to use jar bigger than the batch I have in it so mixes.
