I'm having breaded chicken, and Pete's having a pork chop. With some stir fry rice.

What started out as Posole end up as pork chili, Irish soda bread with currants, and just finished a lemon mascarpone gelato top with balsamic strawberries.

Warm 2 cups of water in a pan on the stove..

Now dump in 3/4 cup of brown sugar in the pan

Next add 1/4 cup of kosher salt

Mix with spoon until all is dissolved

Take off heat....and add 4 cups of cold tap water...easy peasy

Now put chops or chicken in a dish or bowl and pour brine to cover the meat.

Cover and put in fridge for 2-4 hours

Hey Yote, Walmart sells a Caribbean jerk marinade that makes chicken breast awesome, give it try, not too spicy you'll like it. Wolfdog may have a hand in making it too, being Jamaican and all.
