Have a fresh deer liver and heart. Plan to use for coyote bait.

Best to grind it up or just cut in chunks?

once you jar the liver (wether you grind or cube) juice will start to develope during the aging process your gonna want to drain the liquid off the flesh to allow it to break down
a couple different ways you can do this
you can stabilize and use fresh(more for weasel) you can run a lite taint or let the liver rot down to a tart sweetish cream that i like to run in some baits/lures
the heart i put in a clean jar as well and let break down so that the top is a greenish /grey but underneath is still pink then stabilize this makes a great base
