Looks more like somewhere between trichinosis and CWD to me. I don't like cow that raw, but to each their own I guess.
What did you use for grease? My go to is bacon grease. I just ate, but now I'm just about drooling.

That's how eat the chops and tenderloins other than mine are cooked a little more than lugnuts and I usually have bell pepper and onion instead of the mushrooms.

Sniper did yours get a little warm on ya??

Not really, it's just a hard sesr on the outside because of the rub. Inside was just a hair past medium rare.

They call that Texas style around here. I like my beef cooked that way, but I haven't found the nerve to try deer that way yet.

Just a commerical rub. I usually just use SPG type rubs, salt garlic pepper, this time I went this way
