Slightly different twist this time, baked at 350F after rolling but before toppings. Not bad if I do say so myself...

It's made with Canada goose drumsticks and thighs (we do not waste them)
Step 1 I add about 2 lbs of goose legs to the Instant Pot along with a diced onion and a cup of water. 1 TBSP each of salt, chili powder. 1/2 tbsp of garlic powder, cumin and coriander.
Pressure cook on high for 25 minutes, strain liquid (reserve about 1/3 cup), remove all bones, shred meat. Add meat and reserved cooking liquid back to pot. Add 2 quart jars of canned tomatoes. Season again to taste (one envelope of Old El Paso chili fixings is a good cheat) and pressure cook for 15 minutes on high. This mix can be made a day or two ahead.
Step 2 add hot mix to tortilla wrap, add cheese, roll and place on a parchment lined cookie sheet. Brush top with vegetable oil. Bake 15 minutes at 375F. Remove from oven, spoon remaining mix and a pile of shredded cheese on top. Back into hot oven until cheese is melted.

Sadly, I have never had an authentic enchilada, so this is just a made up version of what I think they are LOL...but the canned green and red enchilada sauce from the grocery store goes quite good on these.

Thanks slydogx, I don't have any geese in the freezer but I have lots of pheasants. I'm going to try this recipe with them and save the breasts for another recipe I've been thinking about making.

This works well with squirrel, beaver, venison, muskrat (if you know what you're doing)... pretty much any red meat that will shred after pressure cooking

Should work Lugnut.

I've even used pheasant legs and thighs for making pheasant soup.

Just make sure no bones or tendons are left.

I think they'd work, my only concern would be how lean pheasant tends to be, you may want to add some sort of fat at step 1 so that the shredded meat isn't stringy and dry. I would probably throw a skin on chicken thigh in the pot for that reason.
Otherwise, I see no reason why it wouldn't be just as good as anything else.
