Wife is cooking them down today since she noticed some were going bad so she better do something with the ones still good. The storage building she had them in is heated and ti think they would have stayed good longer had it not been.

Any way Anyone have any low carb ideas to use some of it up?

I like to dice them into 3/4 to 1" pieces, toss them in olive oil and rosemary then put them in the convection oven. That is a tasty vegetable, low cost and stays long in the pantry.

Make good soup too

we vacum seal these all the time. last for years. put in bag then freeze before sealing

Butternut squash is considered to have a low glycemic index.

I do what Danny said, but add cinnamon.

You can always freeze in ziplock bags for later, but they probably won't stay hard enough to use in soup or stew.

.....and dont forget the brown sugar

split them, fill the cavity with butter and splenda brown sugar and bake.

And NH maple syrup too...

Do whatever you want to them sugar and all. If you only eat one meal of them once a week, your low carb plan won't be affected.

and one I just saw , you cut them in half stem to blossom make criss cross cuts and oil , then place cut side down in a hot skillet to sear the flesh and let it fry a bit till it is nicely browned, then turn them over and roast in the oven for 40 minutes at 350
add seasoning of choice , I like seasoned salt it has a lot of garlic and paprika in it
