I saw a guy who had a shushi recipe for native WI fish recently

he was doing a bunch of blue gill sushi , before you go yuck , what he is doing isn't exactly sushi

he makes little pieces of thin fillettes and he dunks them in 180 degree water for about 1-2 minutes , basically lower a wire strainer some times called a skimmer or a spider with the pre cut pieces of fillets into the hot salt water the pieces are cooked almost instantly but he holds it there a minute

then they come out and go in ice water

you flash cook to 160 and cool a minute later it stays firm like sushi meat yet it is cooked.


America only has one issue, we have a Responsibility crisis and everything else stems from it.
