I have a Utica & a Case both USA made. I wouldn't part with either of them. CASE , Love carbon steel, can get it sharp enough to shave your face with it, and easier to get sharp. Stainless is a lot harder to work with getting as good edge.

Utica top Case bottom The Utica are carbon steel as well.

Didn't know they made a fillet knife, used one for skinning beaver, but never knew they made other knives. Another good carbon steel knife!

Good thread, I have a bit of a fillet knife fetish. I love my gerber folder for trips, I mainly use it on turkey and pheasant trips. Also have Gerber folder. Many Rapalas I've had for years but as a lot have said Dexter Russell is the best. Between cabin and home I probably have 20.

When I was a lot younger all we did was cut the fins off, scaled then then gutted them. Still do on a lot of smaller fish. Bought a Rapala when I was 20 something and thats all I have used since if I want to fillet some bigger fish. I have 3 different sizes. I do use an electric knife to cut threw the rib bones but that's all. Cutting the rib bones out and skinning them I use the Rapala's. I use a tumbler for scaling 10 fish or more. Makes that part easy and you don't get scales all over the place.

Marttiini Knives Fillet Knife are as good as they get. Finnish Filet Knife original.

I use a Cutco with adjustable blade length. I use it more on trimming up deer than fish. I bought it used from a pawn shop for $20. It has some excavation company name etched in it so I’m assuming it was a Christmas present or similar. I have had it for 3 years and have yet to sharpen it.
Again, it doesn’t get used a lot, but maybe a couple 3-4 deer a year.
