Worked about five years in a fish cleaning service for a charter boat fleet. Our knives were Dexter Russel. We used a F.Dick hypersteel to touch up the blades. We mostly filleted tuna, Mahi, and wahoo.

the other option is to buy a knife like Havalon where they change the blades out i know most now make a fillet model and actually have thought about buying one myself

I forgot about the folding fillet knives some of you mentioned. These are what I keep in the boat for cutting bait, and self defence if a snake falls in the boat, lol. Very handy and safe.

I have a couple old Townsend fish skinners that I break out on rare occasions, just to have some fish on the cob for a change up.

If you don't cut through the ribs a fillet knife will stay sharp a long time, but I cut through them and so, like I use for all my knives, I have an accusharp knife sharpener in the boat and on my fish cleaning station, shop, kitchen, truck, etc... a couple swipes and it's near razor sharp. Less than $10 each, no other brand or style works as well.

Are Marttinni and Rapala the same knife? Seems like over the years I've had both and the ones I've had were the same I think. Both great knives
