The Honeycrisps are washed and ready.

All done with the apples.

Granddaughter feeding deer trimmings, beef fat and apple slices proportionally through the grinder.

We got four bowls. They are mixed then half of each bowl is added to the next and they are mixed again.

The super-secret seasoning mix is added. The bowls are mixed, then intermixed and mixed again (same as above).

The tedious part; making about three hundred quarter-pound patties. They are layered on half-baking sheets and will be frozen overnight then vacuum-sealed in the morning.

About an apple per 1.5 pounds of meat. I had 49 pounds of venison trimmings and added 12 pounds of beef fat so 61 pounds of meat and fat. I used 48 apples this year but they were on the small side.

You don't want to go overboard with the apples. They add a great flavor but the juice caramelizes on the pan and makes for a tough clean up.

I used to do it all in casings Jordan. Some years ago real casings got very expensive and I refuse to use synthetic casings. So to save money I started making half in casings and half in patties.

Turned out everybody liked the patties better than the tradition links in casing. So I've been making just the patties ever since.

FYI, I had four of them for 15 or 20 years. Then I bought three more several years ago. The newer ones were quite a bit thinner than the old ones. I didn’t want you to be disappointed if you buy some of them.

They still work fine, but are significantly thinner than the older ones.

All the patties were frozen overnight and we got everything vacuumed-sealed in six packs and back in the freezer this morning.

The plastic bags in the bottom of the freezer are three mostly cleaned deer carcasses to be used for scrapple. That will be in a couple of weeks.
