I use it to make scrapple and use the leftover for pancakes. I buy it in bulk at a local, Amish-owned store called Echo Hill Country Store.

Like Doug said, the Amish bulk stores and pseudo Amish bulk stores carry buckwheat flour. The County Variety Store in Bellefontaine, Ohio, which is a pseudo Amish store, carries buckwheat in little containers up to 50 pound sacks. I really like that store and stop whenever I'm near it. I make trips to just it too.

I get many things from Amish stores.
Alot cheaper than elsewhere.
I'm close to about 2-3 small ones, and 15 miles from a larger one that also has fall sales of bacon, and other meat products.
They hand out fliers in late summer, so you can order, then they have a pickup date posted.

Russian/Ukrainian stores. Ask for "gretchka", be sure to roll the r a bit. They sell it in bulk, it must be pretty cheap, I see folks buying it by the sack load.
I'm not a big fan, unless it's in soup.

I just googled "slavic grocery stores in Missouri". Looks like there are a bunch of them. Many of them advertise themselves as "Euro" but that's just to broaden their market appeal I think.

Around here the Amish are just about the only ones that grow buckwheat anymore.
As a kid I remember dad growing it.

Buckwheat honey is very dark and sort of malty tasting. I've only had it once. Usually you can buy it at the Amish stores too. Jungle Jim's in Cincinnati sells buckwheat honey and a lot of other varieties.

My favorite honey is from black locust trees. It's very golden and lightly fruity. I just finished a jar yesterday.

My bees made it through the Winter. They've been out flying. Yesterday there was around 60 that showed up in a bucket of layer mash, eating out of it. Hopefully I can pull a bunch of honey in May or June.
