Can you flesh a beaver pelt and then freeze it, till next trapping season? Or do you have to leave the fat on the hide for it to survive freezing for months?

You can but I think better to flesh later. End product will look a little nicer.

If I was going to hold it over that long, I would not flesh it first. Skin and fold over carefully so little to no meat/fat is exposed to freezer burn.
