Nessmuck OP trapper N Joined: Nov 2011 New Hampshire	It's been so long since I posted some ...fresh out of the oven sourdough... Haven't bought a loaf of bread in a long time. I did the math...it comes out to 1.50 per loaf. It is better to die on your feet than to live on your knees.

Sam...I finally found some of this ...Einkorn...another Ancient Grain. Iam making 2 loafs tonight...with 20% Einkorn Going to have a side by side taste test ..Aftah I bake it tomorrow night. When those scored edges have a dark or almost burned edge of the cut, is when you nailed it. gcs, do you place a dish of water under the bread pan when baking? Mine slices stick above the toaster about inch and a half. So I have to install slice side ways in toaster. That water in the oven creates moisture and a step that I found makes a difference in the rise. Give me a fish, I will eat for a day. Teach me to fish, I will eat for a lifetime

Snowy, I haven't but usually spritz the dough before I cover it with the other pan, Next batch I'll put a water pan in the oven...If I ever get my new oven..... old one crashed and the appliance guy had a screw up and the new one never got ordered, been 2 weeks today waiting... I've been buying all my stuff from this guy for years, first time I had a problem....Should have just got the same model from Lowes, would have had it in a couple days and saved some money...Who knew?, lol
