Not going to need a freezer and a refrigerator freezer for several months. Is it best to leave them run or can I unplug them while not in use and not hurt them any.

I figure I can unplug them but thought I read one time that doing that can be hard on them.

IF you unplug you prop the doors open and have to get everything out of them and let them dry out

if you leave them plugged in you do nothing although tossing some water in them in jugs or buckets to freeze and maintain a thermal load they cycle less.

for a fridge leave a case or 2 of water in them that way they cycle less

America only has one issue, we have a Responsibility crisis and everything else stems from it.
