I feel a little bad eating rabbit sausage this close to Easter, but man it makes some great gravy over them "ugly drop biscuits" as Nessy calls them.

Sage, salt and pepper and a little red pepper flakes. Very simple recipe I use for pork sausage as well. I use way more ground sage than you think it needs, then salt and pepper, fry a little patty and see if it's how I like it, then adjust if needed. I don't follow any exact recipe. I don't mix any other meat with it.

Good deal. I ate a couple with just a little butter and some honey fresh out of the oven, not too bad for as easy as they are to make.

I'm happy to read that it's just spiced up ground rabbit. I was wondering why anybody would add another meat to something as delicious as rabbit. You've been redeemed. LOL

You lost me with the sage though, it's one of my least favorite spices. That's why I use coriander in my sausage and scrapple instead.

You should try it sometime, might make a convert out of you. grin

Coriander is a good secret ingredient for chili too. Like was said a lot more than you figure. Like handful amounts. Try ground fennel in sausage. Dad hated sage so I haven't been around it much I should check it out.

Fennel is for Italian sausage IMO. I use the seeds. Good stuff but not for breakfast sausage. smile

I wish we had the rabbit numbers of the 60's and 70's around here. Habitat loss and avian predation has knocked the population down to next to nothing.

Looks good ADC. I used to make quite a bit of pork breakfast sausage so biscuits and gravy were pretty common. I would do about 40 lbs in a batch. I would grind pork butts. The last sage I got was a waste. You can not smell it opening a pound bag of it. No sage flavor to it. I should order me some from another place and add that to the chicken feed.

canned venison and Ugly but Huge Drop biscuits was how we rolled at the GCP house

when my oldest was maybe 4-5-6 that was her favorite meal

Them Ugly Biscuits are done in about 7 minutes prep 14 minutes baking

with canned venison the gravy and meat were ready to go in the 14 minutes the ugly biscuits were in the oven


America only has one issue, we have a Responsibility crisis and everything else stems from it.
