Mustard and hot sauce for dipping fish, is a staple amongst the urbanities in my neck of the woods.
As for fries, Karl recommends mustard.
A good steak needs no sauce.

I've had plenty of steaks where the only way to choke it down was with steak sauce. Good/great steak is a whole different thing.

I used to use soy sauce on my steaks, but anymore I don't want any sauce covering the taste of the steak. Hotdogs and hamburgers need a generous amount of yellow mustard and just a little katsup. As for fries I usually like to dip them in katsup or whats just as good but I don't get it too often is gravy as a dipping sauce.

My wife likes to mix the mayo and katsup for fries or if we are out she likes to just drown her whole pile of fries in katsup. Thats horrible and a freaking mess.

It's better than ketchup. I seldom put ketchup on fries.

Steak sauce on a good steak? TSK TSK. May as well put ketchup on it lol.
