Just a quick question. Recipe I use calls for salt when mixing the starter and the flour into dough.
What does the salt do? I really anppreciate all the pointers you have shared on here.

Made a couple loaves today. The starter has been easy to keep fed and ripe.

Good looking loaves.
I'm not Nessmuck, and I'm not the baker in my house, but I believe it contributes to flavor and controls fermentation a bit.
