I know there is sinew on the lower front legs of deer and I have been saving that. Where else can I harvest sinew on a deer?

The silver skin I've skinned off backstraps is pretty sinewy, don't know how it compares, but I've peeled off fibers and wrapped stuff and it works ok....

I save the stuff off the backstrap, too. I always make sure I remove the meat and fat that may be left on it. Usually a quick scrape with a spoon will do it.

If you know anyone butchering a beef, get those leg tendons from the beef! Elk and moose have great tendons also.

I meant the lower back legs. The achilies would produce short sinew and probably be more work than the lower leg tendons or backstrap. (any tendon can be used to make sinew, it's just the amount and length that varies.)
