Welp got my transfer off my old boat onto a new one that , really made me understand just how friggen stressed out I was . Been loving it even though we do 5x the work of my old one ...but I'll tell you one thing I miss is that big wide bottom ole magnalite pot they had , tell ya trying to make a roux without it is crazy

New magnalite is priced accordingly with some saying not as good, to be expected, while others say no difference.

I do know that in certain regions like south Louisiana magnalite is more prized than cast iron.

I need to do some research
I bought an oval pot a few years ago for around $20 at a garage or estate sale.

I see them occasionally so might be an opportunity to make some $$$ from what you are saying

That alum pot worked better b/c it heats fast and cools fast. Thats what alum does. Thats why your radiator is made out of aluminum. The reason you may be having roux issues is the pots too hot and you are used to being able to control the temperature better. My suggestion would be to turn the heat down. When Im using cast iron I use high heat at the beginning and then you can tell its too hot and I have to pull it (not just turn the heat down) and go from on the heat to off and keep constantly stirring. You know, its an art.

Magnalite, Sidney Ohio with the old logo that looks like you are looking at old cast iron are the desired ones. Bigger the better.
