Taste wise , BBQ is pretty varied. If the place doesn't offer different flavors , it's probably either going to be sweet or bland. If it's advertised as competition bvq, you can brtb at least with ribs it will be sweet and spicy.

BTW, brisket is nothing to write home about. Tender.....yes.......the rest........yawn.......

The red hots are a souped up hot dog......lot of red pepper, mustard seed, etc But put that on the Frito Pie and it ain't bad.

All good info for a kid from the north on a bbq quest.

A place know for good brisket is probably also going to have a good sausage........like hot guts. if you trim the briskets, the trimmings go into sausage. Nothing goes to waste.........or else you go broke.
