I think it's Sweet Clover.

I like dark stuff. Golden rod makes good tasting, dark honey.

Basswood is good, and so is buckwheat.

I like buckwheat. Tasty and is a good addition to a couple lures that I make.

I've always Tupelo from the south has very distinct sweet flavor.Never had it tho

Black Locust

I'm partial to tulip poplar myself. But I was fortunate to get my start in bees next to a hollow with three 8 foot plus diameter giants and numerous other poplars over four foot. I regularly pulled six or more supers of poplar honey per hive.

My next favorite is tupelo, real ogeechee not black gum or swamp.

Orange blossom will always have a special place for me having spect a few years as a child in the orange groves of Florida. It is my go to cooking and baking honey.

Basswood and sumac are great as well. Sourwood is great but not as high on my list.

It's really a hard call as I have access to so many great ones here in Georgia, palmetto, tupelo, gallberry, sourwood, sumac, poplar, tallow, cotton, orange blossom.

True tupelo is buttery tasting.

I'd say sweet clover (not the white dutch clover) or black locust. Sweet clover honey has an almost cinnamon finish to it. Black locust has a lightly fruity vanilla finish to it.

BTW, tupelo is so prized that every drop of the pure stuff is sold before the bees are even taken to the swamp. And by pure Florida has requirements that anything sold as tupelo must be pollen tested 51% or better. It only grows in a narrow band from the Florida panhandle across south Georgia.

Wild blackberry is good, meadowfoam is really good, and high mountain (5000 ft plus) fireweed is tops.

Most beekeepers around here feed buckwheat honey back to the bees. It's considered inferior around here.

There is a lot of Canola this year and it makes good honey also.

Never find it anyplace but the NW but Cascara is my favorite.
