I like alfalfa and sweet clover best.

we like it all, but the darker and stronger stuff is my personal pick.. But I like black strap molasses and dark maple syrup as well.. My wife favors the light and sweeter stuff..

I like good true wildflower honey - we have a small farmer here who sells it and I buy form him when I want the good stuff

Doesn't it depend on what you have access to? For example strawberry blossom honey is very good but how many have had it?

Access, amount, and location.

You really need acres and acres of one source over a long enough predictable time that you can accurately put on and take off supers to get a "pure" varietal and even then both weather and bees can refuse to cooperate. Many a north Georgia keeper tried for sourwood and got sumac instead as they both bloom about the same time. And location matters as sourwood grows over most all of the eastern seaboard as far south as Florida but only produces well in the southern appalachians above 1500 feet.

The blooms are not shaped for easy access for honeybees as the two did not evolve with each other.

Sourwood is my favorite, anytime I end up back in the south east i pick up a few jars. Had some honey pulled out of an one fire killed tree and it had a nice smoky flavor.

I have seen the Strawberry honey for sale at a ice cream, Strawberry stand in Plant City Florida. When I'm there in August I will have to pick up a jar of it.

I like to buy honey from different parts of the country. Some of the darker stuff is fine in hot tea. But I don't care for it on toast.

Sourwood is tops for me.

We have a lot of knapweed honey here. It's ok but not my favorite. Orange blossom honey from California is excellent.

A lot of these honey varieties you see in gift shops are flavor infused honeys, rather than them being the nectar Seldom are you going to get a fruit or berry flavor from the nectar of plants. Blueberry, somewhat. But if it’s blue, it’s got blueberry favoring added.

I don't get my honey from gift shops. I buy direct from the farmers and I can tell yo it is not flavor infused honey. Also I have had blackberry honey which is popular on the Oregon coast.

I've developed an appreciation as UGA and Georgia Beekeepers Association has really promoted the Welsh Honey Judge program and I know quite a few Welsh Honey Judges.

It's pretty dang stringent on both presentation and flavor.

Matter of fact if your local beekeeper is participating in the program through local club or state contests you can pretty much rest assured they are knowledgable on producing a top notch product.

One stipulation in the program I highly respect is that there is no requirement for first place in any catagory, or any other placement for that matter. If none meet the standard then no awards given, period, and I've seen several events/categories without a first or a first and third. For most honey and wax submissions this is based on a submission of three examples. For instance three jars of extracted and presentation matters equal to flavor and quality. No smudges on glass, filled exactly to the fill line on all three, no honey on underside of lid, no air bubbles or foam, no particulate from wax or smoker soot, no variance at all from jar to jar, etc, etc.

BTW, the pure flavor only category is the black jar category. As the name suggests black or dark jar of any type as the honey is not judged by color or presentation, flavor only.

I have a small scale bee keeper who I swap maple syrup for honey. I get lucky as he swaps a pint for a pint. Each year the honey does taste a little different, as each year different crops do better etc. etc. Not unlike our maple syrup as that changes a bit too. I know in my garden I use exactly the same recipe amounts every batch for my salsa and every year there is a different flavor or taste as onions, carrots, peppers, tomatoes etc. all grow a bit different each year. I notice even more in my tomtato juice.
