That fresh bread would go pahfect with my coffee right now...with buttah .

Sharon...I've been adding 2% extra virgin olive oil...to get a softah crust.

It still has a nice crunch...but it doesn't make your gums bleed..lol

Plus the loaf slices real easy...no more sawing !!

Ness, you add the oil as a percentage of the weight of the flour?

To make it easy...after I let the flour/ water / starter mixture sit for one hour..

I then add my salt 2% and same amount 2 % olive oil.

Example ..if your bread recipe calls for 500 grams of flour..

Your salt would be 10 grams (2%)

And same amount of olive oil ..10 grams (2%)

5x9 tins .
..I use a tin for a lid...for the first 30 minutes of the bake..

Then remove the lid ...to finish browning
