reading through here i can buy that maybe they don't have the nutrition but that was never really the point for me. Cutting the grams of fat which cuts the calories makes it a good filler substitute than say a 1lb hamburger patty made from 60/40 walmart ground burger. I mean ok maybe you can't live on it, but you can lose weight with it and be eating something substantial enough to help fill you up. Anyway that's what we do. i.e. you cholesterol isn't going to go up eating portabellas mushrooms... just kind of depends on what you are trying to accomplish I guess.

Beats the H out of sawdust.

Well, there's one variety that's actually called chicken of the woods, so I imagine that one's supposed to taste somewhat like chicken.

Y'all are welcome to all of them. I'll stick with meat. Maybe a tater or two. But I ain't gonna touch one of those nasty mushrooms. I'm not real bad about watching someone else eat them. I have been known to leave when folks start eating if they were cooked with the meal.

If I was gonna substitute a mushroom for meat, I'd make sure it was a poisonous one. No sense living if yer not eating meat.

Lions Mane is really good sliced about an inch thick and pan seared with onions and garlic, I have made a Sanwich that you could call a hamburger with them. Also Oyster mushrooms baked with parmesan and olive oil or chicken fried are quite good. Both grow wild here in Louisiana and in Mississippi, you should have no trouble cultivating them. I just harvest them in the wild when i find them.

Since I'm Catholic, I would gladly try a meat-flavored mushroom on Friday during Lent. It's an opportunity to try different things. God gave us the animals but he also gave us mushrooms.
