Just whipped up my first batch of cowboy candy…gonna be hard to wait 30 days to try them. I may cheat and crack a jar in a couple weeks. I just used one of the higher rated recipes off the net…anyone else make it…have a good recipe..?

Candied jalapeños used to be an old Cajun lady at the flea market who sold them they wouldn’t even make it to the truck

Used to buy them from a guy I worked with whose mom made them.
She refused to give the recipe to anyone and after I quit working with him I figured out the cheat way to make them.

1/2 gallon jar of sliced jalapenos and 2# of sugar
Drain the jalapenos, rinse and remove any stems/leaves/etc.

Take the jar and add back about 1.5" of jalapenos, then a layer of sugar
Repeat until ll jalapenos and sugar are in jar.
It will just all fit back into jar.

Put in the refrigerator and every time you think about it, take them out and turn jar upside down and right side up several times.
Won't take long and the sugar will draw moisture out and shrink jalapenos down to where you have a pretty good headspace in the jar.
Keep mixing them for several weeks to a month and you have your product.

I make them every year. I just went online and found a recipe with great rating and lots of reviews and they turn out great. Man do they have lots of sugar though.
