How come I've never had a home-canned dill pickel that is crisp?
Does anyone have a method to make them such?

Had that new pickle bread yet? It’s made out of dill dough.

You can add pickle crisp but we haven't seen that work much. Supposedly 24 hours picked to pickles helps. That's hard to do though.
