I am seeing way too many guys challenging the box of meat they get from a processor. I dressed a medium size doe from northern NY this weekend. The entire deer, minus inner tenderloin, rib cage meat-fat layers and a front leg shank (all these parts have cook dates with me due to traditions I honor) and she provided a measured 36 pounds of meat. If you get a 30 - 40 pound box, it is your deer and almost all the meat you could have scraped from it yourself.

Average boneless meat from white tail is 48% of its field dressed weight. Im not disagreeing, however Ive taken a few big Mn corn fed bucks over 200lbs. I think on a buck that size the meat yield is around 80lbs plus.

Average yield. 25 -30% undressed. As always. Shot placement is crucial. I waste a little meat because I like shoulder shots. Short to no tracking. But when you have 12 tags to fill, saves wasted time on tracking.

I was always told hanging weight was 50 percent of live weight and that deboned would shrink that another 30-40%. In weighing butcher cattle, hogs, and a few deer those numbers always played out but the smaller the carcass the higher the waste turns out to ve for some reason...

I say it takes the same number of cuts to cut up a big deer or a little one.
A big one just makes a lot more meat on the table when you are done.
America only has one issue, we have a Responsibility crisis and everything else stems from it.

I have weighed deer and venison yield many times over the years and found our deer here will be real close to half the dressed out weight if trimmed well.....it is generally within 5 lbs one way or the other of half, I agree with UpstateNY completely.

Most commercial butchers won’t take the time to pick away at the carcass like we do. They got that thing cut and wrapped in 15 minutes and I come pick up all the good scraps left over and use for baits.

I have cut up a good amount of deer. Fawns range from 15 to 30 pounds of boneless meat. Most in the 20 pound range.
Most does and yearling bucks range between 35 and 50 pounds of boneless meat.
Old does and mature bucks can get up to 80 pounds or more, but it is the exception, not the rule.
Right on for deer in my area.
